Perfect Soup Weather

The nights have turned very chilly here in Georgia, we have been getting lows in the 30’s!  This is the perfect weather for one of my favorite soup recipes.  When I was in high school, my dad had surgery and a family friend made this soup for us after my dad came home to recover.  It has been a family favorite ever since!  The original recipe called for rice instead of potatoes, but our family has always enjoyed it with potatoes.  This recipe makes A TON, I’ve tried to half it before and it just doesn’t taste the same so if you give it a try invite some friends over to enjoy or share with a neighbor (it’s good the next day too)!


  • 4 chicken breasts
  • 14 cups water
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 med onion, chopped
  • 2 cups celery, chopped
  • 2 cups carrots, diced
  • 2-3 cups cooked potatoes, chopped
  • 4 chicken bouillon cubes
  • 2 lb. Velveeta Cheese, cubed

Cook chicken in water with salt, pepper, onion, celery and carrots for 1 hour.  Chop chicken and return to broth.  Add potatoes and bouillon cubes.  Cook over low heat for 1 1/2 hours.  Add Velveeta cheese and stir until cheese melts.  Enjoy!
