Menu Plan Monday – February 1st-7th

It’s time for another Menu Plan Monday!  Since we ate most everything from the freezer last week (which wasn’t much), I’m going to be restocking our freezer this week.  I will be doubling or tripling a few of the recipes below to help restock.  Here’s our menu:

Monday – Baked Potato Soup (not freezable, but with the cooler temps we’ve had this just sounds yummy!)

Tuesday – Swedish Meatballs over egg noodles (I will be making extra swedish meatballs to store in the freezer)

Wednesday – Parmesan Crusted Tilapia with Lemon Rice Pilaf (I will be making extra of the parmesan mixture to freeze and a double batch of rice to freeze also)

Thursday – Spaghetti with garlic bread

Friday – Homemade Pizza (I will be making extra dough to freeze for future pizzas and making calzones for the freezer also)

Saturday – Chicken cilantro enchiladas (I will triple this recipe and freeze the extras)

Sunday- BBQ Beef in the crock pot (should make enough for BBQ sandwiches and then some to freeze for another night)

Menu Plan Monday – The “There’s a Mouse in the House” Edition

Yes, you read that correctly, we have a mouse mice in our house (the pest man told me “there’s never just one!”)  I’m completely disgusted by the whole ordeal!  We contacted our pest man and he confirmed that they are inside.  Yuck! After looking around, he feels certain that they are coming in through our garage, they have NOT yet found our food and we have discovered them early – this is important since mice have a gestation period of only 19 days! The traps have been set and our pest man will be back to check all the traps.

So, what does this mean for our menu planning? It means that I am refusing to go into our pantry this week. I’m not refusing the pantry because I’m scared of seeing a live mouse, but because I don’t want to see a dead mouse in the trap!  The problem is that I know where pest man has set the traps and it’s this weird force that forces me to look . . . but I don’t want to see it!  Don’t get me wrong, I want the mice to be trapped, but I feel much more comfortable letting pest man tell me that they have been trapped and he can handle the disposal! 

Because dining out every night for the next week would not be good on our budget, I’m being forced to be a bit creative in our plan this week!  I’m raiding our freezer and the crock pot is going to get a good workout this week!  Here’s our plan:

Monday – Chicken Casserole (from freezer)

Tuesday – Out to Dinner (This is awards night at school and we will be celebrating that our oldest has made the Principal’s List!)

Wednesday – Crock Pot Beef Casserole

Thursday – Chicken nuggets (from freezer) Okay, so this isn’t so creative but the boys will eat!

Friday – Beef Soup (from freezer)

Saturday – Chicken Lasagna in the Crock Pot (because of the chaos of last week, we didn’t get around to trying this new recipe)

Sunday – Soft Tacos

Menu Plan Monday

I’m trying really hard to actually stick to our menu plan!  It really does make our week much easier and avoids unplanned restaurant stops.  I have discovered that Saturdays are when I seem to fall apart.  If I don’t have something easy to fix for dinner on Saturday then we are much more likely to head out to dinner.  This week I’m going to try a crock pot recipe on Saturday to see how that works for us!

Here’s is our menu plan for this week:

Monday: Chicken with stuffed feta cheese & bacon with side salad

Tuesday: Pick your own night (We can all pick whatever we want to eat as long as it is easy for Mom to fix. Our most popular picks are leftovers, bowl of cereal, chicken nuggets or waffles from the freezer.)

Wednesday: Baked tilapia with salad and bake potatoes

Thursday: Spaghetti with garlic bread

Friday: Homemade pizza

Saturday: Chicken Lasagna in the Crock Pot (a new recipe!)

Sunday: Chicken casserole

A Race Car Birthday Cake

When our first son was about to celebrate his first birthday, I decided that I should make his cake.  My mother in law and I signed up for cake classes at our local craft store and we learned the ins and outs of cake decorating.  I have since made almost all our children’s birthday cakes! 

After learning some basic techniques, this is a really frugal way to celebrate a birthday.  I use a box cake mix and stock up with I can find them for around .40-.50 a box.  I make my own icing which uses just a few ingredients and I think it tastes much better than the caned icing.  I have used character cake pans in the past and these can be expensive if you buy them at the store; however, you can commonly find them at garage sales and we’ve had great luck reselling old character cake pans on ebay – usually making back all of our money!

This year Nick requested a race car cake.  After some searching online, I decided I could make a race car cake and speed up the decorating process by using candies to help decorate it.  I used 2 round cake pans baking one with chocolate cake and one with yellow.  I then cut a small section off each cake to fit the 2 round pieces together.  The road was edged with m&m’s and Oreos finished off the bottom border.  I topped it off with a few of birthday boy’s toy cars and the cake was complete!

Flooding and Our Weekly Menu Plan

We are at home today because all the schools in our area are closed due to all the flooding! I know I should be using this time to clean out a closet or something, but instead I’m catching up on laundry and reading my favorite blogs!

Laura over at I’m an Organizing Junkie, is hosting a contest for a chance to win the Taste of Homes Slow Cooker Meals cookbook for everybody that posts their weekly menu plan!  I would LOVE to win this cookbook!  I love using my slow cooker and I’m in need of more recipes for it since I’ve began working again!

Here is our menu plan for this week:

Monday: Pick your own night (I try to do this once a week – everybody can choose what they like as long as it is easy to prepare, i.e. leftovers, sandwich, chicken nuggets . . . )

Tuesday: Baked Ravioli

Wednesday: Tacos

Thursday: Crock Pot Chicken with rice

Friday: Pizza night

Saturday: Heavenly chicken lasagna

Sunday: Roast Sticky Chicken

A Valentine Day Treat

Isn’t this cookie bouquet super cute?!  I saw the idea over at Our Best Bites and I just loved it!  I used this same icing reciepe for my Christmas sugar cookies and it is super easy and tates good too!  I made one bouquet for our family and I sent this one with Brad to school.



Soup Weather

I know that most of the country is encountering very cold temperatures today.  Here in Georgia, we are not excluded.  It was a very cold 11 degrees when we left for school this morning!  brrrrr!

Nick and I have spent most of the day cuddled on the couch watching movies 🙂  A perfect jammie day!

This weather is also the perfect soup weather!  Tonight we are having Baked Potato Soup, a recipe I originally got from Quick Cooking magazine, but adapted for our family.  Here’s the recipe I use:

  • 3-4 potatoes
  • 1/3 cup butter
  • 1/3 cup flour
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 3 cups milk
  • 1/2 cup sour cream
  • 5-6 bacon strips, cooked and crumbled
  • 1/2 cup shredded cheddar cheese

Peel and cube potatoes.  Boil in water til tender (about 30 min).  In a large saucepan, melt butter and stir in flour, salt and pepper until smooth.  Gradually stir in milk.  Bring to boil and continue to stir until thickened (about 2 minutes).  Remove from heat and whisk in sour cream.  Add potatoes and heat through.  Garnish with bacon and cheese.  Serves 3-4.
